Ingredients

  • 20 - Lady's fingers
  • Ghee or oil
  • 1 tsp - Cumin seeds
  • 1 tsp - Fennel seeds
  • 1 tsp - Mustard Seeds
  • 2 - small Onions
  • 1.5 tsps - coriander powder
  • 2 tsp - Red Chilli powder
  • 1/2 tsp - Turmeric powder
  • 1 tsps - Tamarind pulp
  • A few Coriander leaves
  • Salt to taste
  • 1 tsp - Lemon Juice
  • For garnishing:
  • Ginger juliennes
  • Lemon wedges
  • How to Make Bharwaan bhindi:

    1. Wash, slit, deseed the bhindis and keep it aside.
    2. Heat ghee or oil and add jeera, saunf, mustard seeds and stir.
    3. Add chopped onions and saute until they are translucent and glossy.
    4. Add coriander, red chilli and turmeric powder.
    5. Add tamarind pulp.
    6. Add chopped coriander, salt and lemon juice and stir occasionally.
    7. Remove and adjust the seasoning.
    8. Fill this masala in the bhindi.
    9. Heat ghee.
    10. Put the bhindis in, cover and cook on a low heat till done.
