Lady fingers - 1 kg

Chick pea flour - 1 cup

Red Chilli powder - 2 tsp

Ajwain (carum seeds) - 1 tsp

Rice powder - 2 tbsp

Coriander powder - 2 tbsp

Turmeric powder - 1 tsp

Dry Mango powder - 1 tsp

Garam Masala powder - 1 tsp

Salt to taste

Oil for frying


  1. Wash and dry the okra.
  2. Chop off heads and talks of the okra and slit lengthwise into 4.
  3. Take 1/2 cup of chick pea flour and mix all the ingredients together in a bowl except rice powder and oil.
  4. Add the okra to the bowl, mix well and refrigerate for 2 hours.
  5. Mix remaining 1/2 cup of chick pea flour with rice powder and toss with the okra.
  6. Heat oil and deep fry in batches until crisp.
  7. Serve hot.
