Ingredients

  • 150 g - Rice flour
  • 2 -Eggs
  • 75 g -Sugar
  • 60 ml - Coconut milk
  • 3 tbsp - Butter ( melted )
  • 2 tsp - Baking powder
  • 1 tsp - Cardamom powder
  • 2 tbsp - Fresh, grated coconut.

How to Make Bibingka

  • Preheat the oven to 180 degree Celsius.
  • Mix the rice flour, baking powder and sugar in a large bowl.
  • Beat in the eggs, cardamom powder and coconut milk into the mixture.
  • Now add the melted butter into the rice flour mixture.
  • Grease and line four ramekins.
  • Pour the mixture equally into the ramekins and sprinkle the grated coconut on top of it.
  • Bake in the preheated oven for 30 to 40 minutes or until skewer inserted comes out clean.
  • Cool it in the wire rack for about 5 mins.
  • Serve while warm.
