Ingredients

  • For Chicken:
  • 500 gms - Chicken
  • 1 tsp - Turmeric
  • Salt - As per taste
  • 1 tsp - Coriander Powder
  • 2 tsp - Ginger garlic paste
  • 1 tsp - pepper
  • 1 tsp - Garam masala
  • 1 tsp - cumin powder
  • 200 gms - Onion
  • Oil
  • 100 gms - Tomato puree
  • 4 - Green Chillies
  • For Rice:
  • 250 gms - Basmati rice
  • Salt
  • 2 - Cinnamon sticks
  • 4 - Cloves
  • Oil
  • 1 tsp - Cumin seeds
  • 5 - Pepper Corns
  • For Garnishing:
  • Kesar or Saffron
  • Fresh mint Leaves
  • Fried onions
  • Milk
  • Dry fruits
  • Ghee or clarified butter

How to Make Biryani (Lucknowi Style)

  • For chicken:
  • Heat some oil in a pan and add onions and green chillies. Saute until transparent.
  • Now add in all the powders, ginger garlic pastes and saute for a few minutes.
  • Add in the chicken and cook for a few mins.
  • Then add in tomato puree and salt and cook till done.
  • For rice:
  • Soak the rice for 30 minutes. Drain the water, keep aside.
  • Heat water in a pan and add all the ingredients given.
  • When the water comes to boil, add rice.
  • The Dum:
  • For the dum, choose a vessel with a tight lid. Dum is a technique in steaming.
  • Layer the bottom of the vessel with the cooked chicken.
  • Layer the rice on top of this. (Also use the water in which the rice was cooked. This well help to capture the moisture, which will help in the cooking the rice and chicken.
  • On the rice put the fried onion, soaked saffron in milk, a little milk, mint leaves, ghee and dry fruits.
  • Repeat the process for each layer.
  • Cover the vessel tightly, cook for 20 minutes.
  • Serve with Raita.
