How to Make Bitter Gourd Fry (Karakayavepudu)

  • Make vertical slits around the length of the bitter gourd and insert salt. Leave it until the salt melts and water comes out of the gourds.
  • Squeeze out excess water from the bitter gourds.
  • Grind the onions and garlic into small pieces.
  • Fry the bitter gourd in 1 tbsp of oil till brown. Remove from flame and reserve.
  • Mix all the ingredients (onion, garlic paste, ginger paste, red chilli powder, roasted channa dal powder and grated coconut and turmeric, salt ) and fry for in oil.
  • Remove from heat and insert the fried mixture into the bitter gourds.
  • Fry for 40 minutes in oil, stirring continuously.
  • Serve with roti or dal rice.
