Ingredients

  • Bitter gourd - 1/2 kg
  • Cumin powder - 1 tsp
  • Ginger paste - 3 tsp
  • Roasted Channa dal - 50 g
  • Grated dry Coconut -1
  • Red Chilli powder - 3 tsp
  • Onion - 2
  • Garlic - 3
  • Salt - as required
  • Oil - 2 tbsp
  • How to Make Bitter Gourd Fry (Karakayavepudu):

    1. Make vertical slits around the length of the bitter gourd and insert salt. Leave it until the salt melts and water comes out of the gourds.
    2. Squeeze out excess water from the bitter gourds.
    3. Grind the onions and garlic into small pieces.
    4. Fry the bitter gourd in 1 tbsp of oil till brown. Remove from flame and reserve.
    5. Mix all the ingredients (onion, garlic paste, ginger paste, red chilli powder, roasted channa dal powder and grated coconut and turmeric, salt ) and fry for in oil.
    6. Remove from heat and insert the fried mixture into the bitter gourds.
    7. Fry for 40 minutes in oil, stirring continuously.
    8. Serve with roti or dal rice.
