Ingredients

  • Bitter gourd - 4
  • Fresh sweet Curd- 2 cups
  • Fresh grated Coconut (Make a paste)- 1/2 cup
  • Lemon Juice (For soaking bitter gourd) - 4 tbsp
  • Salt (For soaking bitter gourd) - 2 tbsp
  • Sugar - 1 tsp
  • Salt as per taste
  • For seasoning:
  • Urad Dal - 2 tsp
  • Mustard Seeds - 1 tsp
  • Hing - 1/2 tsp
  • Red Chillies (as per your taste) - 3-4
  • Curry leaves - 5 to 6
  • Fresh Coriander leaves (chopped finely) - 1 tbsp
  • How to Make Bitter gourd With Fresh Yoghurt:

    1. Cut the bitter gourd into thin, small slices.
    2. Soak the pieces in lemon juice and salt for one hour.
    3. After that wash well and squeeze out the water.
    4. Fry in non-stick pan till crisp. Drain on paper.
    5. Add coconut paste in yoghurt and beat till smooth. Mix in bitter gourd slices.
    6. Heat oil and season with all the ingredients given.
    7. Add sugar and salt.
    8. Pour over the bitter gourds. Then cool and chill in the fridge.
    9. Serve cool with rice and salad.
