Ingredients

  • 1.5 cups - long grain Rice - washed and soaked for 30 minutes
  • 1/2 cup - black eyed beans, soaked overnight
  • 1 - onion, finely chopped
  • 1 - tomato, finely chopped
  • 1/2 tsp - sambhar masala
  • 1 tsp - Red Chilli powder
  • 1/4 tsp - Turmeric powder
  • 1 stalk - Curry leaves
  • 2 whole - Red Chillies
  • 1 tbsp - coriander, finely chopped
  • 1/2 tsp each - cumin seeds, mustard seeds, Urad Dal
  • 1 tsp - Lemon juice
  • 3 tbsp - oil
  • salt
  • How to Make Black-eyed beans savoury rice:

    1. Pressure cook black-eyed beans till they are tender. Drain it and keep it aside.
    2. Boil the rice till each grain is separate.
    3. Drain and let it cool. Keep it aside.
    4. In a heavy sauce pan, heat oil and add seeds and urad dal.
    5. Allow it to splutter, then add curry leaves, whole chilli and stir.
    6. Add onions and cook till it is light pink in colour and tender.
    7. Add all masalas, beans, salt, lemon juice, tomatoes and stir.
    8. Add rice and stir it gently with a spatula, till the gravy coats the rice evenly.
    9. Cover and let it simmer for 2-3 minutes till it is hot.
    10. Garnish it with chopped coriander.
    11. Serve it hot.
