Ingredients

  • Black/red Rice - 1/2 cup
  • Water or stock - 4 cups
  • Celery, chopped - 2 stalks
  • Onion, chopped - 1/2 cup
  • Garlic, minced - 2 tsp
  • Chinese Bean sprouts - 1/2 cup
  • Green capsicum, chopped - 1/2 cup
  • Red capsicum, chopped - 1/2 cup
  • Oyster or button mushroom, sliced - 1/2 cup
  • Tabasco sauce - a few drops
  • Pepper to taste
  • Salt to taste
  • How to Make Black-Red Rice and Vegetable Soup:

    1. Soak the rice in water overnight or for 6-8 hours.
    2. Drain, add water or stock and pressure cook for 12 minutes.
    3. Open the cooker after 15 minutes. Add rest of the ingredients except Tabasco.
    4. Simmer till all the vegetables are cooked.
    5. Add Tabasco and serve hot.
