Ingredients

  • Black/red Rice - 1/2 cup
  • Water or stock - 4 cups
  • Celery, chopped - 2 stalks
  • Onion, chopped - 1/2 cup
  • Garlic, minced - 2 tsp
  • Chinese Bean sprouts - 1/2 cup
  • Green capsicum, chopped - 1/2 cup
  • Red capsicum, chopped - 1/2 cup
  • Oyster or button mushroom, sliced - 1/2 cup
  • Tabasco sauce - a few drops
  • Pepper to taste
  • Salt to taste

How to Make Black-Red Rice and Vegetable Soup

  • Soak the rice in water overnight or for 6-8 hours.
  • Drain, add water or stock and pressure cook for 12 minutes.
  • Open the cooker after 15 minutes. Add rest of the ingredients except Tabasco.
  • Simmer till all the vegetables are cooked.
  • Add Tabasco and serve hot.
