  • 4 eggs
  • 1 onion, finely chopped
  • 1 tbsp - cooked green peas
  • 1 green chilli, finely chopped
  • 1 capsicum, finely chopped
  • 2 tbsp - chopped coriander leaves
  • 1/2 tsp - chilli powder
  • 1/4 tsp - pepper
  • salt to taste

How to Make Boiled Vegetable Omelette

  • Heat the oil in a frying pan and fry the onion, green chilli, capsicum and coriander leaves for 5 mins.
  • Add the chilli powder and pepper and fry for 1 min. more. Then add the green peas.
  • Fry for another 5 mins. Beat the eggs well together and add salt.
  • Pour this mixture over the vegetables.
  • Cook until the omelette is set.
  • Remove the pan under a hot grill and lightly brown on top.
  • Serve immediately.
