Ingredients

  • 4 - medium size potatoes, boiled, peeled and chopped into small pieces
  • 2 - onions, chopped finely
  • 2 - green chillies, chopped
  • 3 tbsp - chopped tomatoes or tomato puree
  • 1 tsp - chopped ginger
  • 1 tsp - chopped garlic
  • 2 tsp - chilli powder
  • 1 tsp - cumin powder
  • 1/2 tsp - turmeric powder
  • 1 tsp - spice powder or garam masala powder
  • 2 tbsp - chopped coriander leaves
  • 2 tbsp - oil
  • salt to taste

How to Make Bombay Potatoes Curry

  • Heat oil in a pan and saute the onions, ginger and garlic till they turn light brown.
  • Add the chilli powder, turmeric powder, cumin powder, spice powder / garam masala powder, salt and tomatoes and stir-fry for about 5 minutes.
  • Add a little water if more gravy is required.
  • Now add the potatoes and mix well.
  • Simmer on low heat for about 5 minutes.
  • Garnish with chopped coriander leaves.
  • Serve with chapattis or rice as a side dish.
