Ingredients

  • 16 slices - bread (edges cut off)
  • 5 slices - cheese singles
  • 5 tbsp - ketchup
  • 1 - cucumber sliced
  • 1 - large potato
  • 15 tbsp - butter
  • 1/4 tsp - pepper
  • For the chutney:
  • 1 bunch - coriander leaves
  • 1/2 bunch - mint leaves
  • 5 tbsp - desiccated coconut
  • 5 tbsp - butter
  • 2 - green chillies
  • 5 - pepper corns
  • 5 tbsp - sugar
  • Salt to taste
  • 1/4 tsp - cumin powder
  • 1 pinch - cardamom/cinnamon powder

How to Make Bombay Sandwich

  • Grind all chutney ingredients in a blender with a little water to get a smooth paste.
  • Boil the potatoes with 1/2 tsp salt.
  • Cut into medium slices, dust with pepper and set aside.
  • Butter the bread slice; add cheese, potato slice, ketchup, chutney and cucumber slice.
  • Cut diagonally into a triangle and serve with ketchup.
