  • Milk - 1.5 litres
  • Grated Bottle Gourd - 2 cups
  • semolina (rawa/sooji) - 1/2 cup
  • Sugar - 1/3 cup
  • Cardamom powder - 1/2 tsp
  • How to Make Bottle Gourd Kheer:

    1. Boil the milk in a thick bottomed pan. Simmer, stirring frequently, till the milk is reduced to 1 litre.
    2. Add the gourd and simmer till it is very soft.
    3. Sprinkle semolina, a tablespoon at a time, and keep stirring till it is cooked.
    4. Add sugar and cardamom.
    5. Simmer for 3 more minutes. Serve warm or cold.
