  • 5 sheep brains
  • 50 gms - bread crumbs
  • 2 eggs
  • 2 to 9 cups - water
  • 1.5 tsp - Turmeric powder
  • oil for deep frying
  • salt to taste
  • How to Make Brain Cutlets:

    1. Clean and wash the brains.
    2. Boil the brains in 2-3 cups of water with salt to taste and turmeric powder.
    3. After boiling, simmer.
    4. Cook till the brains are tender.
    5. Drain out the water and cool.
    6. It will be easier to clear out the thin membranes that are visible.
    7. Cut each brain into 4 halves.
    8. Beat eggs till frothy.
    9. Heat oil in a kadhai till smoking point.
    10. Coat each piece of brain all over with bread crumbs, dip it into beaten egg and slip it into the hot oil.
    11. Lightly turn sides and fry till golden brown.
    12. Serve with green chutney.
