Ingredients

  • 1 packet- dry fettuccini noodles (16 ounce)
  • 1/4 cup - Olive oil
  • 1 pound - shrimp, peeled and deveined
  • 6 - green onions, thinly sliced
  • 4 - Cloves garlic, thinly sliced
  • 1/4 cup - brandy
  • 2 - large tomatoes, diced
  • 1/2 cup - dry white wine
  • 1/2 cup - Butter
  • 1/2 cup - chopped fresh Basil
  • 2 tsp - salt
  • 1 tsp - pepper
  • 1/2 cup - grated Parmesan cheese
  • How to Make Brandied Shrimp with Pasta:

    1. Bring a large pot of lightly salted water to a boil.
    2. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    3. Heat olive oil in a large skillet over medium heat.
    4. Saute shrimp until pink.
    5. Stir in green onions, garlic and brandy.
    6. Carefully ignite brandy with a match, or the gas flame.
    7. Cook for 2 minutes.
    8. Add chopped tomatoes, and cook for 2 minutes.
    9. Stir in wine and butter, and season with basil, salt and pepper.
    10. Cook for 3 minutes. Stir in Parmesan.
    11. Toss with pasta until evenly coated.
