How to Make Brinjal Ambal

  • Soak tamarind in 1/2 cup of water and extract the juice. Keep aside.
  • Cut brinjal into small pieces.
  • Heat oil in a kadai and add mustard seeds.
  • When they splutter, add brinjal and turmeric.
  • Fry till brinjal is well-browned.
  • Add chilli powder, salt, raisins, sugar, tomatoes, and tamarind juice.
  • Simmer till the brinjal is cooked and the gravy is thick.
