Ingredients

  • 2 cups - Brinjal (chopped)
  • 1 cup - Cluster bean (chopped)
  • 1/2 cup - Onion (finely chopped)
  • 2 cloves - Garlic (finely chopped)
  • 2 tsp - Sambar powder
  • 2 tsp - Red chilli powder
  • 3 tsp - Tamarind juice
  • 1 tsp - Mustard
  • Salt to taste
  • 6 tsp - Oil
  • A few curry leaves

How to Make Brinjal and Cluster Bean Curry

  • Cook cluster bean with salt and keep aside.
  • In a pan, add oil. Then add mustard.
  • Add garlic and onion, fry them well till they turn golden brown.
  • Now, add salt, sambar powder, red chilli powder and brinjal pieces.
  • Mix them well. Medium the stove.
  • Fry for few minutes, till brinjal changes to brown colour.
  • Now add tamarind juice and cooked cluster bean. Mix them well.
  • close the pan with a lid. Cook on medium heat for 20 minutes.
  • Garnish with curry leaves.
  • Serve hot with rice or chapatti.
