Ingredients

  • 1/2 kg - small brinjals
  • 2 - onions, chopped
  • 2 - tomatoes, chopped
  • 3 - potatoes boiled, cut into quarters
  • 3 tbsp - coconut paste
  • 1 tsp - garlic paste
  • 1 tsp - ginger paste
  • 2 tsp - chilli powder
  • 1 tsp - garam masala
  • 1 tsp - coriander powder
  • 1/2 tsp - turmeric powder
  • 3 tbsp - chopped coriander leaves
  • 3 tbsp - oil
  • Salt to taste

How to Make Brinjal And Potatoes Fry

  • Cut each brinjal into 4 quarters in such a way that the quarters are still joined at the top. Wash and leave in a bowl of water.
  • Heat oil in a pan and lightly fry the brinjals, keep aside.
  • Add some more oil and saute the onions till golden brown.
  • Then add ginger garlic paste and add chilli powder, garam masala, turmeric powder, coriander powder and fry for a minute with a little water.
  • Add tomatoes and fry till soft.
  • Finally add the fried brinjals and potatoes and stir well. Simmer on low heat for 3 or 4 minutes.
  • Garnish with chopped coriander leaves.
  • Serve hit.
