Ingredients

  • 2 - Brinjals (medium size)
  • 1 cup - Toor Dal
  • 1 - Onion (medium size)
  • 3 - Green chillies (cut into small pieces)
  • Coriander leaves (chopped)
  • 5 Cloves - Garlic and 1-inch Ginger (ground together)
  • 1 tsp - Cumin seeds
  • 1/4 tsp - Mustard Seeds
  • 2 tsp - Dhania seeds
  • 2 - Red Chillies
  • 1 pinch - Hing
  • 1 pinch - Turmeric powder
  • Oil
  • salt according to taste
  • How to Make Brinjal and toor dal curry:

    1. Roast the toor dal for about a minute.
    2. Cook the dal in a pressure cooker for about 2 minutes or for one whistle.
    3. In a heavy bottomed pan, fry red chillies, cumin, and dhania seeds, and grind them to form a fine powder.
    4. In a heavy bottomed pan put 2 tsp of oil, and add mustard seeds, cumin seeds, hing, and turmeric powder.
    5. When they splutter, add green chillies, ginger-garlic paste, onion and brinjal, and stir well.
    6. Let it cook for about 3 minutes.
    7. Add toor dal and salt.
    8. Cook for about 15 to 20 minutes.
    9. Put it to simmer, add coriander leaves, and cook for about a minute.
    10. You can also garnish with grated coconut.
