Ingredients

  • 1 - large long brinjal/eggplant
  • 1/4 tsp - turmeric powder
  • 1/4 tsp - cumin powder
  • 1/4 tsp - pepper powder
  • 1/4 tsp - red chilli powder
  • 1/2 tsp - salt
  • Olive oil

How to Make Brinjal Bites or Grilled Eggplant

  • Cut the eggplant into half cm-thin slices and dust them with all the powders, salt and 2 tbsp olive oil. Toss to cover evenly.
  • Shallow fry or grill on both sides for 2-3 minutes on medium heat.
  • Serve hot as a snack or side dish.
  • Alternative method 1:
  • You can make a batter of gram flour, yogurt, salt, red chilli, turmeric, cumin and pepper powders.
  • Coat the slices in the batter and deep-fry till golden brown.
  • Alternative method 2:
  • Coat the slices with a batter of corn flour and milk. Dust them with bread crumbs or semolina. Shallow fry on each side.
