Brinjal Curry is a tasty and easy brinjal recipe with a South Indian twist. It goes well with Rice and Chappatis.

Ingredients

  • 5 - small brinjals, chopped
  • 2 tbsp - oil
  • 1 tbsp - curry powder
  • salt
  • 1/4 tsp - Turmeric powder
  • 1/4 tsp - chilli powder
  • | For seasoning:
  • 1/2 tsp - Mustard Seeds
  • 1/2 tsp - Jeera
  • 1/2 tsp - Urad Dal
  • hing, a dash
  • Curry powder (roast in a little oil and grind):
  • 1/2 tsp - Urad Dal
  • 1/2 tsp - Channa dal
  • 1/2 tsp - Coriander seeds
  • 2 - Red Chillies
  • How to Make Brinjal curry:

    1. Heat oil in a wide pan.
    2. Ready the seasoning.
    3. Add chopped or sliced brinjals, turmeric powder, salt, chilli powder and stir gently.
    4. Simmer, place a lid and cook until almost done.
    5. Remove the lid.
    6. Add curry powder and stir for 2 more minutes till the brinjals turn crisp.
