Ingredients

  • 1 kg - brinjal cubed
  • 1 - onion
  • 1 tbsp - channa dal
  • 1 cup - peanuts
  • 2tbsp - dhania seeds
  • 4-5 - red chillies
  • 1 tbsp - tamarind juice
  • 1/2 tsp - jeera
  • Salt to taste

How to Make Brinjal fry

  • Heat oil in a pan, add onions and saute till translucent.
  • Add brinjals, salt and fry till tender.
  • In a separate pan, fry channa dal, peanuts, dhania seeds, red chillies, jeera and grind with tamarind juice to a paste.
  • Add this paste to the pan with the brinjals and shallow fry for 5 mins.
  • Serve hot.
