How to Make Brinjal Kootu

  • Roast the channa dal, urad dhal, red chillies, pepper, asafoetida, copra, fenugreek seeds and coriander seeds
  • Fry onion in 1 tsp oil and add it to the roasted masala and grind it into a paste
  • Cook the thur dhal and peanuts in the pressure cooker
  • Heat some oil in a kadai and add the mustard and the chopped brinjal. Fry the brinjals until tender.
  • Add the tamarind juice and bring it to boil and then add the ground masala and salt and boil it for 2 mins
  • Add the cooked dhal and boil for 10 mins on low fire
  • Garnish with chopped coriander leaves and curry leaves
