Ingredients

  • 2 - long brinjals (cut into small pieces)
  • 3 to 4 - potatoes (cut into small pieces)
  • Oil - as needed
  • 1 tsp - cumin seeds
  • 2 tsp - black mustard seeds
  • 2 tsp - turmeric powder
  • 4 to 5 tbsps - cumin and coriander powder
  • 1 tsp - garam masala powder
  • 1 tsp - ginger paste
  • 1 tsp - garlic paste
  • 5 to 6 tbsp - besan (gram flour)
  • 2 cups - milk
  • salt to taste

How to Make Brinjal Potato Sabzi

  • Heat oil in pan and splutter cumin and mustard seeds.
  • Add cut potatoes and brinjal pieces. Add turmeric, cumin-coriander powder, garam masala powder, ginger and garlic pastes and salt.
  • Mix all the seasoning well with the potato and brinjal pieces.
  • Add little oil if the mixture looks dry.
  • After seasoning is mixed well with the potato and brinjal pieces, add besan and mix it well.
  • You may add some more oil if needed.
  • Add milk and cook till the potato and brinjal pieces turn soft.
  • Serve this vegetable hot with fresh rotis.
