Ingredients

  • 250 g - Prawn, medium side
  • 100 g - Brinjal, cut into 1 by 2 inch slice
  • 100 g - tomato, chopped
  • 1/2 tbsp - cumin
  • 1/2 tbsp - mustard
  • 1/2 tbsp - turmeric
  • 1 tbsp - cumin
  • 2tbsp - mustard
  • 3 - green chilli
  • C coriander leaves
  • 4 cloves - garlic
  • 1/4 inch - ginger
  • Grind all ingredients into a paste with 2 tbsp of water
  • Salt to taste
  • 5 tbsp - oil
  • 1/2 cup - water

How to Make Brinjal Prawn Curry

  • Clean the prawns.
  • Take 2 tbsp of oil in a frying pan, and fry the brinjal until golden brown. Keep the fried brinjal aside.
  • Then take 2 tbsp of oil and fry the prawn on a low heat until golden brown.
  • Keep the prawn aside.
  • Take 1 tbsp of oil and when oil start to heat, add the 1/2 tbsp of cumin and 1/2 tbsp of mustard.
  • Then add the chopped tomato and let it cook for 2 to 5 minutes.
  • Then add the fried prawn, the brinjal, the paste and turmeric and salt to taste.
  • Let it cook for 5 minutes and add 1/2 cup of water.
  • Keep your pan on a high heat then reduce the heat and keep it in low to medium heat for 5 minutes.
  • And your curry is ready serve hot with rice.
