How to Make Brinjal Rasavangi

  • Wash and cut brinjal into long thin slices.
  • Heat oil in a kadai. Add the mustard, hing and curry leaves.
  • Add the brinjal, cook till they are soft.
  • Add the tomato, turmeric powder, and salt
  • Boil the tur dal
  • Fry the dhania, Bengal gram, red chillies, coconut and ginger in 1/2 tsp oil. Grind them in the mixer.
  • Add this ground mixture and boiled dal to the cooked brinjal, add water.
  • Garnish with coriander leaves.
  • Serve it with hot rice.
