Ingredients

  • 1 kg - Brinjals sliced
  • 3 - 4 large Onions sliced
  • 1/2 inch - Ginger minced, fresh or powder
  • 3 - chillies minced
  • Vinegar to taste
  • Salt to taste
  • 1 cup - thick Coconut Milk
  • How to Make Brinjal Salad:

    1. Marinate the sliced brinjals with any masala for 1/2 hour
    2. Shallow fry and keep aside
    3. Mix minced items, add vinegar and salt
    4. Layer brinjals, minced mix and sliced onion
    5. Lastly add coconut milk
    6. Can be eaten either hot or cold
