Ingredients

  • 500 g - Brinjals
  • 2 - Tomato
  • 2 - Potato
  • 2 - Onion
  • 5 tbsp - coriander powder
  • 3 tbsp - oil
  • 1 pinch - Sugar
  • 5 sprigs - Coriander leaves
  • To taste - Red Chilli powder
  • Salt
  • How to Make Brinjal stuffing:

    1. Wash and cut the brinjals into four segments retaining the stem
    2. Cut tomato, potato and onion into fine pieces
    3. Add red chilli powder, salt, coriander powder, chopped coriander leaves, sugar and oil and mix it well
    4. Stuff this mix into the cut portions of brinjal
    5. Now place all the stuffed brinjals into a kadai
    6. Add half a glass of water
    7. Close the kadai with a lid and keep it on high flame for about 3-4 mins till the gravy starts boiling
    8. Reduce the flame and let it cook for 20 mins in sim till done
    9. Serve as a side dish for rice.
