  • 500 g - brinjals
  • 2 - tomato
  • 2 - potato
  • 2 - onion
  • 5 tbsp - coriander powder
  • 3 tbsp - oil
  • 1 pinch - sugar
  • 5 sprigs - coriander leaves
  • To taste - red chilli powder
  • Salt

How to Make Brinjal stuffing

  • Wash and cut the brinjals into four segments retaining the stem
  • Cut tomato, potato and onion into fine pieces
  • Add red chilli powder, salt, coriander powder, chopped coriander leaves, sugar and oil and mix it well
  • Stuff this mix into the cut portions of brinjal
  • Now place all the stuffed brinjals into a kadai
  • Add half a glass of water
  • Close the kadai with a lid and keep it on high flame for about 3-4 mins till the gravy starts boiling
  • Reduce the flame and let it cook for 20 mins in sim till done
  • Serve as a side dish for rice.
