Ingredients

  • Brinjal - 500 g
  • Prawns - 500 g
  • Sweet corn - 100 g
  • Pea - 100 g
  • Small onion - 2 (finely chopped)
  • Garlic - 1 tsp
  • Tomato - 2
  • Egg - 1 (optional)
  • Soy sauce - 1 tbsp
  • Coriander powder - 1 tsp
  • Allspice - 1 tsp
  • Red pepper flakes - a pinch
  • Oil - 3 tbsp

How to Make Brinjal with Prawns

  • Cut the brinjals into small, square pieces. Sprinkle some salt and keep aside.
  • Heat some oil in a frying pan and fry the brinjal pieces until they soften up (about 5 minutes). Keep aside.
  • Add the rest of the oil to the pan. Fry the onions and garlic until they becomes translucent.
  • Add the prawns and tomatoes and fry for 5 minutes.
  • Add the sweet corn, peas and fried brinjals and continue frying.
  • Add coriander powder, soy sauce and salt to taste. Stir and cook until all the ingredients are tender.
  • Add allspice and red pepper flakes.
  • Whisk an egg and add to the pan for binding (optional).
