How to Make Brinjals Stuffed with Paneer

  • Cut away the stalks and slit the brinjals into flour, keeping them joint at the base.
  • Grate the paneer.
  • Heat 2 tsp of oil and roast coriander seeds, Bengal gram Dal, black gram Dal, red chillies and asafetida.
  • Cool and powder coarsely.
  • Mix the powder with salt and paneer.
  • Stuff the brinjals with this mixture.
  • Heat the remaining oil and add mustard.
  • When it crackles, add the brinjals.
  • Cover and cook slow flame till brinjals are tender.
  • Serve hot with steamed rice and Dal.
