Ingredients

  • 250 g - broccoli (cut into pieces)
  • 3 cups - chicken stock (or water and 1 chicken stock cube)
  • 1 - small onion (chopped)
  • 1 - clove of garlic (optional)
  • 2 tbsp - oil
  • 1/2 cup - low fat milk
  • Salt and pepper

How to Make Broccoli soup

  • Heat oil. Saute onion and garlic, add chopped broccoli, chicken stock or water and crumbled stock cubes.
  • Cook till it is tender.
  • Remove from the heat.
  • Liquidise in a blender, add salt and pepper.
  • Heat the soup, add milk and serve with melba toast.
