Ingredients

  • 3 - eggs
  • 1 - medium onion, chopped
  • 1 - small tomato, chopped
  • 1/2 tsp - Ginger paste
  • 1/2 tsp - Garlic paste
  • 2 tsp - curry powder
  • 1/4 tsp - Turmeric powder
  • Salt to taste
  • Oil - As required
  • 1/4 tsp - Mustard Seed
  • Curry leaves - as required
  • Chopped Coriander leaves - as required
  • 200 ml - Water
  • Substitute for curry powder:
  • 1 tsp - chilli powder, 1.5 tsp - coriander powder, 1/2 tsp - Garam Masala
  • How to Make Broken Egg Curry:

    1. Heat oil in kadai, add mustard seed & let it splutter.
    2. Add curry leaves & chopped onion, saute until it turns golden brown.
    3. Add ginger and garlic paste & saute it till the raw smell has gone.
    4. Now add tomato & stir.
    5. When Tomato becomes soft, blend with onion.
    6. Now add curry powder, turmeric powder & salt. Stir for a minute & add water.
    7. When this curry boils well to a slight thick consistency, break the eggs into it. Do not stir.
    8. After 5 minutes, carefully flip the eggs onto the other side.
    9. Lower the heat, let it simmer for 10 mins.
    10. When it turns to a semi gravy state, turn off the heat and garnish with chopped coriander leaves.
    11. Serve hot with rice or rotis.
