Ingredients

  • broken matta rice, washed and drained - 1 cup
  • carrot, cut into 1/2 cm dice - 1/2 cup
  • cauliflower, cut into small pieces - 1 cup
  • cooked Green peas - 1/2 cup
  • oil - 1.5 tbsp
  • Mustard Seeds - 1 tsp
  • Cinnamon 2 small pieces
  • green chilies, slit 2 or 3
  • Curry leaves few
  • onion, finely chopped - 3/4 cup
  • ginger, minced - 1 tsp
  • water - 2.5 cup
  • Cloves 3
  • Turmeric powder - 1/2 tsp
  • coriander leaves, chopped - 2 tbsp
  • Lime juice to taste
  • salt to taste

How to Make

  • Heat oil in a kadai, preferably, non stick.
  • Add mustard seeds.
  • When they splutter add cloves and cinnamon.
  • After few seconds add green chilies and curry leaves.
  • Fry for 30 seconds.
  • Add onion and fry till light brown.
  • Add ginger and water.
  • Add turmeric, carrot and cauliflower.
  • Bring to a boil.
  • Cover and simmer for 3 minutes.
  • Add green peas salt and rice.
  • Cover and simmer gently till the rice is cooked and water is absorbed.
  • Mix in coriander leaves and lime juice.
  • Serve hot.
