Ingredients

  • broken matta rice, washed and drained - 1 cup
  • carrot, cut into 1/2 cm dice - 1/2 cup
  • cauliflower, cut into small pieces - 1 cup
  • cooked Green peas - 1/2 cup
  • oil - 1.5 tbsp
  • Mustard Seeds - 1 tsp
  • Cinnamon 2 small pieces
  • green chilies, slit 2 or 3
  • Curry leaves few
  • onion, finely chopped - 3/4 cup
  • ginger, minced - 1 tsp
  • water - 2.5 cup
  • Cloves 3
  • Turmeric powder - 1/2 tsp
  • coriander leaves, chopped - 2 tbsp
  • Lime juice to taste
  • salt to taste
  • How to Make Broken Matta Rice Vegetable Bhath:

    1. Heat oil in a kadai, preferably, non stick.
    2. Add mustard seeds.
    3. When they splutter add cloves and cinnamon.
    4. After few seconds add green chilies and curry leaves.
    5. Fry for 30 seconds.
    6. Add onion and fry till light brown.
    7. Add ginger and water.
    8. Add turmeric, carrot and cauliflower.
    9. Bring to a boil.
    10. Cover and simmer for 3 minutes.
    11. Add green peas salt and rice.
    12. Cover and simmer gently till the rice is cooked and water is absorbed.
    13. Mix in coriander leaves and lime juice.
    14. Serve hot.
