Ingredients

  • 1 cup - Uncooked brown Rice
  • 3 cups - Chicken broth
  • 2 - Carrots, sliced
  • 1/2 cup - Chopped Onion
  • 1/2 cup - Chopped Celery
  • 1 cup - Chopped Spring onion
  • 1/2 tsp - Minced Garlic
  • 1/4 tsp - Minced Ginger
  • 6-7 - Tomatoes, peeled and chopped
  • 1/2 cup - Shelled peas
  • Salt as per taste
  • 1/4 tsp - Pepper powder
  • 1/2 tsp - Oregano
  • 1/2 tsp - Thyme
  • 2 tbsp - Chopped Coriander leaves
  • How to Make Brown Rice Stew:

    1. In a large sauce-pan, mix all the ingredients except oregano, thyme and coriander leaves. Bring to a boil
    2. Reduce the heat and let it simmer, stirring occasionally
    3. Let it cook till rice is tender, approx 50 mins.
    4. Add oregano and thyme
    5. Stir and let it simmer for another 2-3 min
    6. Transfer it into a serving dish, garnish with coriander leaves.
