Ingredients

  • white fish fillets - 350 gm
  • Spinach - 2 cup, roughly chopped
  • cooked brown Rice - 2 cup
  • Green chillies 2, chopped
  • Ginger 2 cm slice, chopped
  • Garlic 4 flakes, chopped
  • Mint leaves - 3 tbsp, chopped
  • Coriander leaves - 3 tbsp, chopped
  • Olive oil - 1 tbsp
  • Cloves 2
  • Cinnamon 5 cm piece
  • Onion - 1/4 cup, thinly sliced
  • Lime juice - 2 tbsp
  • salt to taste
  • How to Make Brown Rice with Fish and Spinach:

    1. Cut fish into 3 cm cubes.
    2. Crush green chilli, ginger, garlic, mint and coriander together.
    3. Toss fish with this mixture and salt to taste.
    4. Marinate for 15 minutes.
    5. Heat oil in a non stick fry pan.
    6. Add cloves, cinnamon and onion.
    7. Fry onion on a low flame till softened.
    8. Add fish and chopped spinach.
    9. Cover and simmer till fish and spinach are cooked.
    10. Add brown rice and mix gently.
    11. Leave on a low flame for 5 minutes.
    12. Serve hot sprinkled with lime juice.
