Ingredients

  • 4 - tortillas
  • 1/4 cup - boiled potatoes
  • 1/4 cup - boiled red beans
  • 1/4 cup - boiled sprouted moong
  • 1 - finely chopped onion
  • 1 - finely chopped tomato
  • 1 - finely chopped carrot
  • 1/4 cup - green peas
  • Cheese
  • Paneer - a few small pieces
  • 1/4 cup - cauliflower
  • A few - peanuts, crushed
  • 1 inch - ginger, finely chopped 4 - green chillies, finely chopped
  • Chopped coriander leaves
  • Green chutney/sauce
  • Turmeric and chilli powder
  • Salt
  • Oil (olive oil/ groundnut oil)

How to Make Burrito

  • Boil the beans in the cooker till done. Drain and reserve the liquid.
  • Boil the potatoes separately. Cool and mash with some salt.
  • In a frying pan, heat oil and add the onions, green chillies, ginger, peanuts, and paneer (optional).
  • When the onions brown, add the tomatoes.
  • When it is cooked, add the carrot, cauliflower, green peas and add the reserved water
  • Add turmeric, salt and chilli powder, according to taste.
  • When the vegetables have boiled and the water has evaporated, add the beans and coriander leaves. Mix well and keep aside.
  • Take a tortilla, apply some sauce/green chutney and spread the mashed potato over it.
  • Then spread the cooked vegetable-bean mixture over it.
  • Add grated cheese (optional). Now roll the tortillas and cut into three pieces.
  • Place on a baking tray and bake at 350 degree F for 45 mins. Do not overbake.
