  • 3 - capsicums
  • 2 cups - cooked rice, preferably sona masuri
  • 1 - carrots
  • 2 - boiled potatoes
  • 1/2 cup - peas
  • Slit green chillies - a few
  • Chopped ginger - a few
  • Karipatta and coriander leaves - a few
  • 3-4 tbsp - grated fresh coconut
  • juice of 1 lime
  • Salt - to taste
  • Oil - to taste
  • Turmeric powder, mustard seeds, channa dal and urad dal - for seasoning.

How to Make Capsicum Lime Rice

  • Heat oil and add mustard seeds. After it splutters, add chana dal and urad dal and let them brown.
  • Add slit green chillies, ginger and karipatta leaves.
  • Add chopped capsicum, carrots and peas and let them get cooked.
  • Add boiled and mashed potatoes, turmeric powder and salt.
  • After the vegetables are mixed well, add grated coconut and coriander leaves.
  • Add lime juice and mix with cooked rice.
  • You can also add cashew nuts while seasoning and/or chopped methi leaves with the other vegetables for special taste.
