How to Make Carrot and Almond Cake

  • Sieve flour, wheat germ powder, bicarbonate of soda, nutmeg, and cinnamon powder.
  • Beat together lightly beaten eggs, honey and oil.
  • Add to the sieved ingredients. Continue beating until smooth.
  • Stir in grated carrot, crushed and well drained pineapple and chopped walnuts.
  • Mix well and pour into a greased lamington tin.
  • Decorate with almonds and glaced cherries. Bake at 180 degree C for 35-40 minutes.
  • Cool in tin for 5-8 minutes and turn out on a wire rack for further cooling.
  • Cut into squares and serve.
