Ingredients

  • 2 - large eggs
  • 350 gm - carrot, peeled and grated
  • 250 gm - white bread crumbs
  • 150 ml - Milk
  • 125 gm - margarine
  • 125 gm - soft Brown sugar
  • 100 gm - dates, copped finely
  • 100 gm - Raisins
  • 50 gm - preserved peel, chopped finely
  • 1 tsp - mixed spice powder

How to Make Carrot and Fruit Pudding

  • Mix together all the ingredients from carrots to spice powder.
  • Add lightly beaten eggs and milk and stir till uniformly mixed.
  • Place the mixture in a greased pudding mould, preferable with a well-fitting lid.
  • Cover with double layer of aluminium foil and seal it well.
  • Pour about 2 cups of water in a pressure cooker.
  • Place the pudding mould in it.
  • Pressure cook for 1 hour.
  • Cool the cooker for 15-20 minutes and open.
  • Lift out the mould.
  • Cool slightly and place it on a serving plate.
  • Serve warm with custard.
