Ingredients

  • Carrot - 250 gm
  • tinned Pineapple 2 to 3 slices
  • Ginger 3 cm
  • soya/sunflower oil - 1 tbsp
  • Orange juice - ¼ cup
  • Lime juice - 1 tbsp
  • dark soya sauce - 2 tsp
  • Sugar - 1 tsp
  • Coriander leaves - 2 tbsp
  • pepper to taste
  • salt to taste
  • How to Make Carrot and Pineapple Salad:

    1. Peel and cut carrots into match sticks.
    2. Drain the pineapple slices and chop and mix with carrots.
    3. Crush the ginger and squeeze the juice.
    4. Combine ginger juice with oil, orange juice, lime juice, Soya sauce, salt, pepper and sugar.
    5. Pour over the carrot pineapple mixture and toss well.
    6. Serve garnished with coriander leaves.
