  • 1 cup - onion, chopped
  • 1 cup - carrot, cut into 1/2 cm dice
  • 1 cup - beans, chopped fine
  • 1 tsp - Mustard Seeds
  • 2 tsp - black gram (urad) dal
  • 1 tsp - chili powder or to taste
  • 3 tbsp - oil
  • 1/2 tsp - Turmeric powder
  • few Curry leaves
  • salt to taste
  • How to Make Carrot Beans Curry (Porial):

    1. Heat oil in a small fry pan over the gas. Add mustard. When it splutters, add dal. When the dal turns golden brown, add curry leaves.
    2. Pour it in a shallow microwave-proof glass dish. Add onion. Cook on full power for 3 minutes, and stir it once half way through cooking.
    3. Add the vegetables, chilli, and turmeric powders. Sprinkle 2-3 tbsp of water. Cook covered on full power for 8-10 minutes.
    4. Add salt to taste. Mix well. Cook for 2 more minutes. Serve hot, garnished with ground coconut if desired.
