  • 1.5 cups- carrot, grated
  • 1.5 litres - Milk
  • 1/2 cup Cashew nut
  • 1 cup- warm Milk for soaking Cashew nut
  • 3/4 cup - Sugar
  • 6- Cardamom powder
  • 2 tbsp- Ghee
  • How to Make Carrot Cashew Payasam:

    1. Soak cashew nuts in 1 cup of warm milk for half an hour.
    2. Boil 1.5 litres of milk in a heavy bottomed vessel and keep stirring till it is reduced to half the quantity.
    3. Fry the grated carrot in ghee for a few minutes.
    4. Grind the fried carrot and soaked cashew nuts to a coarse paste. Add to the milk and add sugar and simmer till everything blends well.
    5. Finally, add the cardamom powder and serve chilled.
