Ingredients

  • carrot, coarsely grated - 1 cup
  • cooked long grain Rice - 4 cup
  • soya oil - 3 tbsp
  • garlic, peeled and crushed 4 Cloves
  • ginger, grated - 1 tbsp
  • green chilies, chopped 2
  • spring onion, chopped - 1.5 cup
  • light soya sauce - 2 tbsp
  • Coriander leaves - 2 tbsp
  • salt to taste
  • How to Make Carrot Fried Rice:

    1. Heat oil in a kadai or wok. Add garlic.
    2. Fry till it is dark brown.
    3. Remove the fried garlic cloves and discard.
    4. Add ginger, green chilies and carrots to the oil in the kadai.
    5. Stir fry for 2 minutes. Add spring onion.
    6. Stir fry for 1 minute.
    7. Add rice and Soya sauce or salt. Mix well.
    8. Keep covered on very low heat till the rice is heated well.
    9. Serve hot garnished with coriander leaves.
