  • Cut carrots into small pieces.
  • Take a pan (preferably non-stick) and add some oil.
  • Season jeera and curry leaves.
  • When done, add carrots, salt, red chilli powder, and grated coconut.
  • Mix them well and cook covered for 7 minutes.
  • Check the spiciness and cook uncovered for 5 minutes.
  • Serve the carrot fry with hot rice.
