Ingredients

  • 2 cup - grated carrot
  • 2 cup - milk
  • 4 tbsp - cashew nut powder
  • 1/2 tsp - cardamom powder
  • A few drops- almond essence
  • 1 cup - condensed milk
  • 1 cup - fresh cream
  • 1 big pinch - saffron

How to Make Carrot Khulfi

  • Soak saffron in 1 tsp of milk.
  • Mix remaining milk with carrot.
  • Simmer steadily till the carrot becomes very soft and the milk is reduced to about 1 cup.
  • Cool and blend till smooth.
  • Combine the carrot mixture with rest of the ingredients.
  • Dissolve the saffron and add.
  • Taste and add sugar if needed.
  • Pour in khulfi mould and freeze till firm.
  • Unmould just before serving.
