Ingredients

  • 250 gms - maida
  • 1.25 tsp - baking powder
  • 180 gms - powered sugar
  • 160 gms - thick curd
  • 150 ml - cooking oil (sunflower)
  • 2-3 tsp - oil for oiling the cake tin
  • 1.5 cups - grated carrots (squeeze out the juice from the carrots)
  • 200 gms - raisins

How to Make Carrot loaf

  • Sift together the maida, baking powder and keep side. Blend together the powdered sugar, curd and oil in a mixer. Run the mixer with frequent pauses till the sugar blends with the curd and oil.
  • Prepare the loaf tin by oiling the base and sides of the loaf tin.
  • In a mixing bowl, place the dry ingredients i.e. the sifted maida and baking powder. Mix the ingredients gently and slowly so that the dry and wet ingredients mix well together. Also, add the grated carrots (with all the juice extracted) and the raisins, and mix gently.
  • Now, pour this mixture into the prepared loaf tin. Place in a pre-heated oven to bake at 180 degrees C for 45 mins. Insert a skewer or a knife in the centre of the loaf to see that it comes out clean. If the knife comes out clean it means the loaf is ready.
