Ingredients

  • 2 cups - basmati Rice
  • 2 - fresh carrots, grated
  • 2 - onions, chopped
  • 1 tsp - Dhania seeds
  • 1 tsp - cumin
  • 5 pieces - Red Chillies
  • 1/2 cup - grated dry Coconut
  • 2 tsp - Cashewnuts
  • 2 - Cinnamons
  • 2 - Cloves
  • 1 cup - Peanut powder
  • oil as required
  • salt to taste
  • How to Make Carrot Rice with peanut powder:

    1. Cook the rice and keep it aside.
    2. Warm the dhania seeds, cumin, red chillies and dry coconut on low flame and grind to make a dry masala.
    3. Heat oil. Add the cinnamon, cloves and cashewnuts.
    4. Add the onions and fry until golden.
    5. Add the grated carrots and leave it on low flame for 2 minutes.
    6. Add the cooked rice and salt and the dry masala.
    7. Add peanut powder and mix well.
