Ingredients

  • 5 to 6 - fresh carrots, peeled
  • 1/2 - apple, peeled
  • 1/2 - tomato
  • 1 tsp - lemon juice
  • 1 stalk - lemon grass
  • 1 sprig - mint leaves, finely chopped
  • 1 tbsp - basil leaves, finely chopped
  • 1/4 tsp - ginger, crushed
  • 2 tbsp - sugar
  • 1/2 tsp - salt

How to Make Carrots with Herbs

  • Wash and halve carrots. Put in a microwave-proof bowl.
  • Add lemon grass stalk, roughly chopped.
  • Add tomato and apple and microwave them for 1 minute on high.
  • Remove, cover, and allow it to cool at room temperature.
  • Refrigerate for some time or till required.
  • Run this mixture in an electric blender till very smooth.
  • Add 800ml chilled water, lemon juice, sugar, and salt.
  • Strain with a plastic strainer and chill.
  • Put ginger in a muslin cloth and twist into a pouch.
  • Rub this into a small bowl with 20ml water.
  • Squeeze this ginger concentrate into juice.
  • Add other herbs and run again in mixer till herbs are crushed.
  • Pour into glasses and serve chilled.
  • Best served fresh.
