Ingredients

  • 1 cup - basmati rice
  • 2 - onions
  • 1 - carrot
  • 12 - small flowerets cauliflower
  • 5 or 6 - green chillies
  • 4 cloves - garlic
  • 1/2 piece - ginger
  • 1/2 tsp - coriander powder
  • 1/2 tsp - cumin powder
  • 1 tsp - garam masala powder
  • A few sprigs - coriander
  • 4 sprigs - curry leaves
  • 6 - cashew nuts
  • 2 tsp - ghee
  • Salt to taste

How to Make Cauliflower and Carrot Biriyani

  • Wash and soak rice for an hour
  • Chop onions, carrot and cauliflower.
  • Heat ghee in microwave for 1 min.
  • Add cashew nuts, fry for a minute and keep aside.
  • Add mustard, curry leaves and chillies for 30 secs.
  • Now add onion, carrot, cauliflower, garlic, ginger, coriander, cumin, masala powders and salt, and cook for 3 minutes.
  • Drain the rice and add to it. Add 2 cups of water and mix lightly.
  • Microwave for 11 minutes, stirring once after 5 minutes.
  • Sprinkle with finely chopped coriander leaves and cashew nuts.
