Ingredients

  • 12 - bread slices
  • 4 tbsp - melted Butter
  • For Filling:
  • 1 cup - Cauliflower pieces, cooked
  • 1/2 cup - spring onion, chopped
  • 1/2 cup - Milk
  • 1/2 tin - sweet Corn Cream style
  • 2 tbsp - Butter
  • 1 tbsp - Maida
  • 2 tbsp - parsley, chopped
  • 4 tbsp - grated cheddar cheese
  • Salt and pepper to taste
  • How to Make Cauliflower and Corn Cups:

    1. Cut rounds from bread slices, using a biscuit cutter.
    2. Greas 12 cup cake moulds with butter. Press a slice of bread in each mould.
    3. Smear slices with remaining butter.
    4. Bake in a moderate oven (180 0 C) till brown, about 15- 20 mins
    5. Take out the cases from the mould 15 minutes after baking and cool them completely.
    6. Store in an air tight container. Just before serving, add the filling and garnish with tomato strips and spring onion greens.
    7. For Filling:
    8. Heat butter and saute spring onions.
    9. Add maida, fry for 1 minute.
    10. Add cauliflower, sweet corn, milk, parsley salt and pepper.
    11. Cook stirring till the mixture begins to boil.
    12. Stir in the cheese and remove from fire.
