  • 2 cups - Cauliflower florets
  • 2 - onions, medium size
  • 2 cups - Milk
  • 1 liter - vegetable stock
  • 1 cup - lettuce, chopped
  • 1/2 cup - celery, chopped
  • 2 tbsp - Butter
  • salt & pepper to taste
  • grated cheese to garnish

How to Make Cauliflower and Lettuce Soup

  • Heat the butter and lightly saute all the vegetables.
  • Add the stock and simmer till the vegetables are cooked.
  • Cool and blend the vegetables in a mixer.
  • Add the milk and heat the soup till it just begins to bubble at the sides.
  • Add salt and pepper to taste.
  • Serve hot, garnished with grated cheese.
