Ingredients

  • 2 cups - Cauliflower florets
  • 2 - onions, medium size
  • 2 cups - Milk
  • 1 liter - vegetable stock
  • 1 cup - lettuce, chopped
  • 1/2 cup - celery, chopped
  • 2 tbsp - Butter
  • salt & pepper to taste
  • grated cheese to garnish
  • How to Make Cauliflower and Lettuce Soup:

    1. Heat the butter and lightly saute all the vegetables.
    2. Add the stock and simmer till the vegetables are cooked.
    3. Cool and blend the vegetables in a mixer.
    4. Add the milk and heat the soup till it just begins to bubble at the sides.
    5. Add salt and pepper to taste.
    6. Serve hot, garnished with grated cheese.
